Day 1: Improvising

As I intend to start the meal plan tomorrow (Monday), this weekend has been left relatively free of structure for meals. I thought it would be an interesting way to start the experiment, testing the waters on my own and building my own vegan meals. I liked this freedom and was surprised at how normally I could eat while still being vegan. Of course, without a satisfying daily dose of a sugary dessert like a pastry or ice cream, I had to find a replacement in a box of nerds and half the tub of chocolate cat cookies from Trader Joe's (VERY good, btw). Day 1 passed without any trouble. So far, so good. 
Breakfast: Quaker's oatmeal in a cup and Emergen-C in water


Lunch: HUMMUS! Carrots, pretzels, an orange, and coconut milk. Delish.
