Three days have now passed, and I believe that over the weekend, I learned some valuable lessons, as described by my previous posts. One has to be prepared for veganism. Not only prepared materialisticly, but prepared mentally.
I have the food in my home. I have been eating. The main problem was, I hadn't been preparing. I had been surviving on peanut butter and tortilla chips. This afternoon, after renouncing rice cakes as a meal, I pulled myself aside and said "pull yourself together man!"
After that bold slap in the face, I made myself a chick pea salad with tomatos, Italian dressing, and fresh basil for dinner. It was rather wonderful, and I patted myself on the back for making such a comeback.
After that accomplishment, I found myself in a frenzy of preparedness. I cooked three quinoa and black bean burritos, with tomatos, peppers, and green onions, which I flavored with salsa and "fiesta dip" seasoning. They're in the fridge, being saved for tomorrow.
