Just a quick update, Steph and I both decided to blog and make pancakes today (today was a good day.) I opted for Stacked Strawberry Shortcake Pancakes from Buzzfeed's list of 29 Delicious Vegan Breakfasts (link on recipes page). The website's photos don't lie – these were delicious. On their own, these simple pancakes tasted a little plain and ironically eggy, but top that stack with a blend of strawberries and a frozen banana and you've got yourself a luxurious treat made in heaven. My photos don't do it justice, but trust me when I say it was wonderful.
